Title: Double Apple Cake - [Ruth Gerdes Cuthbertson]

Yield: 1 Servings

1/2cMargerine with
1cSugar
  Beat in:
2 Eggs
  Add:
1 1/2cChopped apples
1tsVanilla
  Toss:
2 1/2cFlour, unsifted with
1tsEach cinnamon, salt, and
  Baking soda.
  Stir into mixture, making
  Batter
  Core:
3 Apples, cut into thin
  Wedges

Arrange some wedges on sides of a 9" round x 1.5" deep cake pan. Spoon in batter; level. Arrange remaining wedges on top. Drizzle with 2 TB melted butter. Bake at 350F for 55 minutes, or until done.

Cool 10 minutes; remove from pan. If desired, glaze apple topping with 1/4 cup melted currant jelly.
